Yum Yum Oatmeal Cookies

Time to bake some Healthy and yummy Cookies .. :)



Ingredients:

Walnuts -1 cup (110 grams) (optional)

Unsalted butter - 3/4 cup (170 grams) (room temperature)

Light brown sugar - 1 cup (210 grams)

Egg - 1 large

Vanilla extract - 1 Tbsp

All purpose flour - 3/4 cup (105 grams)

Baking soda - 1/2 Tbsp

Salt - 1/2 Tbsp

Ground cinnamon powder - 1/2 Tbsp

old-fashioned Oats - 3 cups (260 grams)

Dried cranberries/cherries/raisins - 1 cup (optional)


Steps:

Preheat oven to 350 degrees F (177 degrees C) and line two baking sheets with parchment paper.

To toast nuts: Place nuts on a baking sheet and bake for 8-10 minutes. Let it cool and then chop into pieces.

To prepare better :

In a big bowl beat the butter and sugar for about about 2 - 3 minutes or( until creamy and smooth ).
Add the egg and vanilla extract and beat to combine.

In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

Add the flour mixture to the creamed mixture and beat until mixed well.

Add the nuts, oats, and raisins to the mixture .

For large cookies, use 1/4 cup of batter and space the cookies about 2 inches apart on the baking sheet. Then wet your hand and flatten the cookies slightly with your fingers so they are about 1/2 inch thick.

Final Baking :

Bake the cookies for about 12 - 15 minutes or until light golden brown around the edges but still soft and a little wet in the centers.

Remove from oven and let the cookies cool a few minutes , once done keep them on a wire rack to cool.

Super Easy Carrot Cake



Do you have some baby carrots sitting in your fridge, okay So now time to make this super easy Carrot cake, Its my personal favorite in Winters :)



Ingredients:

Granulated sugar - 1½ cups
Vegetable oil - 1 cup
Eggs - 3
All-purpose flour - 2 cups
ground cinnamon - 2 teaspoons (Optional)
Baking soda - 1 teaspoon
Vanilla  Extract - 1 teaspoon
salt - ½ teaspoon (I don't use this)
Grated carrots - 3 cups (I used baby carrots)
Chopped walnuts - 1 cup (Optional)
Raisins - (Optional)

Steps:

Preheat oven to 350°F.

Grease bottom and sides of one baking pan

In a large bowl, beat sugar, oil and eggs until blended.

In a seperate bowl, add flour, cinnamon, baking soda and the salt; Whisk to combine.

Add dry mixture into wet mixture, Mix to combine.

Add vanilla extrct and carrots. Mix it well.

Pour into pan.

Bake 30 to 40 minutes, or until toothpick inserted in center comes out clean.

Cool it for 10 minutes; remove from pans to cooling rack. Cool completely.

Serve and Enjoy with Hot coffee :)

Veg Spaghetti


Being a working woman, I generally don't have much time for cooking.  And sometimes I don’t have much ingredients available in my kitchen too, still I manage to cook delicious food ;)


I hope this article will help you to prepare a quick Vegetarian Spaghetti  :)


Ingredients:

Spaghetti - 200-250 gm
Tomato Puree - 150-200 gm  (Available in Supermarkets)
Onion Sliced - 2
Capsicum Sliced - 1 Big
Butter - 2 Tbsp
Tomato sauce - 2 Tbsp or Accordingly
Sugar - 2 Tbsp
Chili Flakes - Accordingly
Oregano -  Accordingly
Black Pepper - 2 Tbsp
Olive Oil/ Vegetable Oil - 1 Tbsp
Cream -(Optional) - 3-4 Tbsp
Salt - Accordingly
Any Grated Cheese (I used Mozzarella) - 1 small bowl or Accordingly

Steps:

Put on a pot of water to boil with plenty of water, Add 1 Tbsp of Salt and 1 Tbsp of oil. Once the water comes to boil, Add spaghetti (I broke it in to half). It takes around 5-8 minutes to be done.

Once the spaghetti is done, drain the water and pour some cold water. Keep aside.

Preheat the oven to 150C.

In a separate pot heat the butter, Add sliced onions and capsicum, Sauté it for around 2-3 minutes (Keep it crunchy). Once it’s done (If onion looks a bit transparent), keep aside 1/4th part of this (to use as garnishing).

 Add tomato puree in the pot, once it’s heated up, add salt, black pepper, Chili flakes, Oregano, sugar and  ketchup, mix it well for around 2-3 minutes.

 Add Spaghetti to the Mixture, mix it well, Now you can add cream if you want. Let it boil once again.

 Grease the baking tray with butter. Add the Spaghetti mixture to it, Sprinkle Cheese and the capsicum, and onion (which  we kept aside).

 Put the tray in oven for around 20 minutes.

 Your Yum Yum Spaghetti is ready. Serve and enjoy :)
