Mushroom Sauce Pasta :)



This is one of my memory from a trip to Poland. I got to taste this most amazing n delicious Mushroom Sauce Pasta in Stena Line Cruise...(Still Mouthwatering ;) )..  So try this superb easy recipe n do share your feedback :)



Ingredients:
pasta - 400 gm
salt - (Accordingly)
olive oil - 2-3 Tbsp
Butter - 2 Tbsp
Garlic clove - 2-4 (minced)
Baby mushrooms – 200-250 gms stems removed and minced, mushroom caps quartered
heavy whipping cream - 1 cup 
Parmigiano cheese – grated

Directions:
1. Put on a pot of water to boil with plenty of water, Add 1 Tbsp of Salt and 1 Tbsp of oil. Once the water comes to boil. Cook pasta until done.Drain pasta and pour some cold water. Keep aside
2. In a large pan heat oil and butter over medium heat. Add garlic and minced mushroom stems. Cook for approximately 5-6 until softened. Stir as necessary.
3. Add mushroom caps, cream and salt and pepper.  Continue cooking additional 4-5 minutes.
4. Add cheese and drained pasta. Stir to combine.
5. Garnish with additional cheese.

P.S - Don't forget to add most important ingredient to it  - Love  :)

Upside Down Orange Cake

Its healthy, tasty and super easy to make. Try it with afternoon tea/coffee and try to stop at one slice ;) 




Ingredients:


oranges,thinly sliced - 2

water - 2 cups 

sugar - 1 cup 

Cake:

orange - 1  

Eggs - 4 

sugar - 1 cup 

plain yogurt - 2/3 cup 

vanilla extract - 1 teaspoon 

melted butter - 250g 

all-purpose flour -2¾ cups 

baking powder - 2 teaspoons 


Steps:

Put in pot water and sugar and cook over medium heat, stirring, until sugar is completely dissolved. Bring to boil and cook for ten minutes,

Add the oranges to hot syrup and cook gently for 15 minutes until glazed orange slices become soft and shiny. Remove with slotted spoon and place carefully on a tray.

Cake steps:

Preheat oven to 350F.

Grease the pan with butter.

Squeeze the orange and use it with pulp.

Blend the orange juice with pulp in a blender  with eggs, melted butter, vanilla extract and buttermilk until fluffy and light.

In large bowl mix flour, baking powder and sugar. Add the liquid mixture and mix until just blended.

Arrange on the bottom of pan with orange slices, overlapping - like tile. Pour the batter over oranges and bake for about 50 minutes or until toothpick inserted in the middle of the cake comes out clean.

Let the cake cool slightly for about 15-20 minutes, Serve and enjoy it should be still warm.
